Broccoli Quiche Cups

1 Packet Cream of Broccoli Soup
3 egg whites
1/4 tsp baking powder
1/2 C steamed broccoli
Place egg whites, soup and baking powder in mixing bowl and beat well. Divide steamed broccoli equally into 3 muffin cups and pour batter over the broccoli. Bake at 400 for 15 minutes. Counts as one MF meal, 1/4 lean and 1 green serving.
Medifast Snickerdoodles

2 packets of Medifast vanilla shake
1 packet of splenda
1 tsp of baking powder
1 - 2 tsp vanilla extract
2 - 4 ounces of water
- Preheat oven to 350 degrees.
- Whisk dry ingredients together in a small ball and slowly add the water.
- As soon as it thickens like a paste, drop the batter by the spoonful on a parchment paper lined baking sheet or lightly sprayed cookie sheet. You should get about 4 to 5 cookies.
- Bake for 8 minutes. If desired sprinkle some cinnamon on top.

1 pkt Medifast Apple Cinnamon Oatmeal
1-3 packets Splenda sweetener (your preference)
1/3 cup water
1/8 tsp baking powder
½ tsp almond extract
Pre-heat oven to 350°.
Mix all dry ingredients together. Add extract and water.
Stir until moistened. Set aside for 5-10 minutes to allow ingredients to achieve appropriate consistency.

Granola Crunch

- 1 packet of Medifast Oatmeal, any flavor
- 1 Splenda packet or sweetener of your choice
- 1 pinch of baking powder
- Spice of your choice - cinnamon, or apple pie spice
- Mix all ingredients in a bowl, and add just enough water to make a dough. You want it very thick and as dry as possible but so it still sticks together - crumbly!
- Pinch the pieces of dough and drop on a baking pan sprayed with Pam
- Bake at 400 for approximately 8 min, and then turn granola.
- Bake a few minutes more until brown and crispy, watching closely to make sure it doesn’t burn.
Peanut butter and jelly sandwich

Ingredients
1 pkg MEDIFAST Diabetic Vanilla Shake
1 pkg MEDIFAST Scrambled Eggs
1 tsp baking powder
1/8 cup Sugar-Free Peanut Butter Syrup
1/8 cup water
- Combine wet and dry separately, then bring together (a whisk is best for this).
- Spread in a rectangular shape, about a quarter inch thick, over a Pam sprayed baking sheet and bake at 375 for 5 minutes. Do the toothpick test and if it’s not completely clean when it comes out, let it sit in the oven for a couple more minutes.
Once done, pull it out and let the bread cool on a rack. Cut it down the middle to form two pieces that resemble sliced bread.
Horizontally slice one of the pieces to make two thin slices of bread.
Spread the peanut butter and fruit spread over the slices, combine and enjoy!
