Lemon Cheesecake

2 pkg Medifast vanilla pudding
1/3 pkg cream cheese (about 3 carbs per serving)
1/4 cup lemon juice (gives it a good tang so its not to sweet)
3 pkg splenda

Blend it all togher with electric mixers so its nice and creamy with no lumps. Usually it would be 2 Medifast meals but i think I only ate maybe a fourth of it. I spooned some in a bowl and added 1 tbsp of sugar free coolwhip (about 1 carb) and crushed like 3 cinnamon soy crisps over top for the "crust."
